Air Fryer Chicken Breast
Boneless, skinless chicken breasts of about 6 oz take 18–22 minutes in the air fryer at 375°F (190°C), flipped halfway, and are done at 165°F (74°C) in the thickest part. The moderate temperature is what keeps them from drying out. Rest 5 minutes before you slice. This page is the plain breast. Wings, breaded fried chicken, and whole roast chicken are different cuts with different times, collected on the chicken hub.
Cook to an internal temperature of 165°F (74°C).
Ingredients
- 2 boneless, skinless chicken breasts, about 6 oz (170 g) each
- 1 tbsp (14 g) olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- ½ tsp fine salt
- ¼ tsp black pepper
Estimated nutrition
Per serving, estimated: 270 kcal, 38 g protein, 0 g carbs,11 g fat, 0 g fiber, 660 mg sodium.
Estimated per serving from typical USDA FoodData Central values for the amounts listed, then rounded. Not a laboratory analysis. Two raw 6 oz skinless breasts, 1 tbsp oil, and ½ tsp salt, split across 2 servings. Paprika and garlic powder are omitted. Larger 8–10 oz breasts are common in some packs. They need more time, and the nutrition per breast would be higher than this estimate.
Instructions
- Pat the breasts dry. If one end is much thicker, pound that end to roughly even depth or the thin end will be 175°F when the thick end hits 165°F. Rub with oil, paprika, garlic powder, ½ tsp salt, and pepper.
- Preheat to 375°F (190°C). A hotter start browns faster than this cut can afford.
- Air fry in one layer, not touching, for 18–22 minutes. Flip at halfway. Start checking temperature at 16 minutes in the thickest part, from the side, not the tapered tip.
- Pull them at 165°F (74°C). Rest 5 minutes before slicing. The rest is when the juices redistribute. Slice too soon and the board looks juicy while the meat eats dry.
Basket size and model notes
Two 6 oz breasts fit a standard basket. Three that touch should be cooked as two plus one. Contact patches stay pale and take longer, so the ones you can measure mislead you about the one in the middle.
A compact, high-wattage basket may be done at 16–18 minutes. An oven-style fryer may need 22–24 and a rotate instead of a clean flip. The first time you cook breast on a new machine, check early. Write the minute down. It stays stable for that machine.
Butterflied breasts (cut horizontally into two thinner cutlets) take about 11–13 minutes at the same 375°F. They are the weeknight version when 20 minutes is too many. Still confirm 165°F. Thin meat overshoots quickly.
Tips
- Brining for 20 minutes in salted water, then drying, is worthwhile if your breasts are very thick or you have been disappointed before. Dry them well or the spice rub slides off.
- Sugary glazes and barbecue sauce go on for the last 2 minutes. Earlier, they blacken at the edges while the center is still climbing.
- Slice across the grain for serving. It does not change doneness. It changes how tender the same meat feels.
Substitutions
- Paprika and garlic. Any salt-free spice blend, plus the measured ½ tsp salt. Blends labeled “chicken seasoning” are often already salty. Taste a pinch before you add the full salt.
- Boneless breast. Boneless thighs at 400°F for about 16–18 minutes, to the same 165°F. They are more forgiving. Bone-in breast is closer to 22–25 minutes and should be checked at the bone without touching it.
- Olive oil. A teaspoon of yogurt or mustard as the binder. It helps spices stick on a very smooth breast.
Storage and reheating
Refrigerate within 2 hours, whole or sliced, up to 3 days. Sliced breast dries faster in the fridge, so leave it whole if you are packing lunch the next day and slice in the morning. Freeze up to 2 months. Thaw in the fridge. Cooked breast that has been frozen is best chopped into something sauced, not served as a plain slice.
Reheat at 320°F (160°C) for 3–5 minutes with a teaspoon of water in the dish if you want it less dry, covered loosely. It will not be as juicy as the rested slice on day one. Cold breast in a salad or sandwich is often better than a second hard cook.
Questions
How long do you air fry chicken breast?
18–22 minutes at 375°F (190°C) for a 6 oz boneless, skinless breast, flipped halfway, to 165°F (74°C). Rest 5 minutes. Thicker breasts take longer. Butterflied cutlets take about 11–13 minutes at the same temperature.
What temperature is chicken breast done in the air fryer?
165°F (74°C) in the thickest part. Time is a range because breasts are not a standard thickness. Color and juice are not reliable. The same 165°F applies to wings, fried chicken, and a whole bird. The clocks do not.
How do you keep air fryer chicken breast from drying out?
Use 375°F rather than 400°F, even out the thickness, stop at 165°F, and rest before slicing. Overshooting by five degrees is the usual cause, not the air fryer itself.
