Air Fryer Cauliflower
Cauliflower florets take 12–15 minutes in the air fryer at 400°F (200°C), shaken twice, until the edges are brown and the stems are tender. Cut them the same size, toss with 2 tablespoons of oil, and do not crowd the basket. One head serves four as a side. The base recipe is vegan. Parmesan, if you add it, goes on at the end and changes that. Tofu is the other main vegetarian recipe. This page is only the cauliflower.
Ingredients
- 1 head cauliflower, cut into even florets, about 500 g (1.1 lb) of florets
- 2 tbsp (27 g) olive oil
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp fine salt
Estimated nutrition
Per serving, estimated: 90 kcal, 2 g protein, 6 g carbs,7 g fat, 3 g fiber, 330 mg sodium.
Estimated per serving from typical USDA FoodData Central values for the amounts listed, then rounded. Not a laboratory analysis. 500 g raw florets, 2 tbsp olive oil, and ½ tsp salt, divided by 4. The stem core and leaves are not included. Paprika and garlic powder are omitted.
Instructions
- Cut florets so the stems are a similar thickness. Huge pieces stay raw while small crumbs burn. Leave a bit of stem on each floret so it does not crumble when you shake.
- Toss with olive oil, smoked paprika, garlic powder, and ½ tsp salt. The florets should shine, not sit in a pool. Oil that drips off burns under the basket.
- Preheat to 400°F (200°C). Air fry in one layer 12–15 minutes, shaking at 5 and 10 minutes. They are done when a stem yields to a knife and the edges are spotted brown. Pale and crunchy means they need a few more minutes, not more oil.
- Taste before you add more salt. If you want cheese, toss with a small handful of grated Parmesan in a bowl after cooking, while the florets are hot. Cheese in the basket melts through the holes.
Basket size and model notes
One head is usually two layers’ worth in a basket under 6 qt. The second batch finishes faster. Pull it when the edges match the first batch, even if the timer has a minute left.
A very hot compact fryer can blacken the thin branched tips before the stem is tender. If that happens on your machine, drop to 380°F (190°C) and add 2 minutes. The doneness test is the stem, not the darkest crumb.
Frozen florets are wetter. Do not thaw them. Add about 3 minutes and shake more often. They will not brown as deeply as fresh.
Tips
- Even cuts matter more than the spice blend. A mixed bowl of dust and trunks cannot share a timer.
- The leaves are edible. Toss the small tender ones in for the last 5 minutes if you want them crisp rather than burnt.
- A sauce made of yogurt or tahini belongs on the plate. In the basket it steams the crust you shook twice to create.
Substitutions
- Smoked paprika. Curry powder, or chili flakes with the garlic. Keep the oil and salt. A dry rub with sugar will darken early, so add anything sweet at the end.
- Cauliflower. Broccoli at 400°F for 8–10 minutes is the nearer swap, and it is a shorter cook. Do not run broccoli for the full 15 or the buds scorch. Brussels sprouts, halved, want 375°F for 12–15 minutes. The cooking times chart lists both.
- Olive oil. Any neutral oil, same amount. An oil-free batch can be cooked, and it will be drier and less brown. A teaspoon is the practical minimum if you want color.
Storage and reheating
Refrigerate up to 4 days. The browning softens overnight, and the smell of cooked cauliflower gets stronger. It is still good in a grain bowl or chopped into a wrap. Freeze only if you plan to blend it into soup later. Frozen roasted florets turn watery when thawed.
Reheat at 375°F (190°C) for 3–4 minutes in one layer. They will not be as crisp as the first service. Chop leftovers into an omelette or a salad rather than expecting a second roast.
Questions
How long does cauliflower take in the air fryer?
12–15 minutes at 400°F (200°C) for even fresh florets tossed with oil, shaken twice. The stem should be tender and the edges spotted brown. Frozen florets need a few extra minutes.
Why is my air fryer cauliflower soggy?
The florets were wet, the pieces were huge, or the basket was packed. Dry them after washing, cut them evenly, and cook in one layer. Oil helps browning. It does not fix crowding.
Is air fryer cauliflower vegan?
The base recipe is vegan: cauliflower, oil, paprika, garlic powder, and salt. Parmesan at the end is optional and makes it vegetarian rather than vegan. Skip the cheese if that matters.
